Packed with vegetables, lean protein, and hearty flavor, this Chicken & Veggie Orzo Soup comes together in under 45 minutes — and tastes even better the next day (if there are leftovers!).
Ingredients
Serves: 4–6
Prep: 10 minutes | Cook: 30 minutes
• 1 tablespoon olive oil
• 1 medium onion, diced
• 2 carrots, peeled & sliced
• 2 celery stalks, sliced
• 3 cloves garlic, minced
• 1 teaspoon dried thyme
• 1 teaspoon dried oregano
• 6 cups low-sodium chicken broth
• 1 cup cooked shredded chicken (rotisserie works great!)
• 3⁄4 cup dry orzo pasta
• 2 cups fresh spinach, chopped
• Salt & black pepper to taste
• Juice of 1⁄2 lemon (optional, but highly recommended)
Instructions
• Sauté the veggies
• Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook 5–7 minutes
until softened.
• Add garlic and herbs
• Stir in the garlic, thyme, and oregano for about 1 minute, just until fragrant.
• Pour in broth & simmer
• Add the chicken broth and bring to a gentle boil. Reduce heat and simmer 10 minutes.
• Cook the orzo
• Stir in the orzo and cook according to package directions (usually 8–10 minutes), stirring
occasionally so it doesn’t stick.
• Add chicken & spinach
• Stir in shredded chicken and spinach. Cook 2–3 minutes until warmed through and the spinach
wilts.
• Season & brighten
• Add salt, pepper, and the lemon juice if you’d like a fresh finish.
